Do you know that moment when your baby becomes a toddler, and with the coming of this stage, the restrictions on foods such as salt, sugar, cocoa, chocolate disappear?!
Well, my advice is to try to replace sugar with healthy sweetener, and make it known and taste of sweet. The later and the less often and a little, the better!
But still, when you are craving something sweet, I highly recommend these Marshmallow muffins!!
They are a bit outside of my concept, easy and quick to prepare, do not throw all the ingredients in the blender and put in the oven, but do not be scared, nor like a cake with 3 floors and 3 kinds of cream are not! :))
Anyway I give it, it's worth any minute spent in the kitchen!!
Let me elaborate!!
- 100 g fresh blueberries
- 5 eggs (I took from Tei Grocery )
- 190 g butter (I took from Bacania Tei )
- 225 g flour (I took from Dried Fruits Supplier )
- 100 (I took from GrecoStevia – pay attention to quantities: 1 tablespoon GrecoStevia = 2 tablespoons sugar)
- 200 g ricotta
- 100 g marshmallow mini
- 12 forms of muffins
Preheat the oven to 175 degrees Celsius.
Wash and choose blueberries.
Separate the eggs and beat the egg whites foam. Put cold until the moment of use.
Melt the butter in a shallow pot and let cool.Mix the yolks with stevia until you get a creamy composition.Incorporate the flour, and finally the liquid butter and ricotta.
Add the egg whites and blueberries foam (except for 24 pieces) and stir gently from the bottom up.
Put 1/3 of the dough in the muffin shapes.
Distribute over the dough 60 g of marshmallow candy, then fill with the amount of dough left.Place on top of each 2 blueberries and bake muffins 20 minutes. Remove the tray with the muffins, distribute the rest of the Marshmallow candies on them, and put in the oven for 5 minutes, until they melt.
