Rigatoni with mushrooms and white sauce

When the secret is "easy and quick to prepare", and the end result is "tasty and nutritious", well, then we are talking about a real success, on all levels!
- 250 g Gluten-Free Pasta Rigatoni Farabella from Fonte Naturis
- 500 g of sliced mushrooms
- 1/4 glass of hydrated cashews for at least 4 hours
- 11/2 glass of soy milk
- 3 tablespoons of lemon juice
- 2 tablespoons of inactive yeast flakes
- 2 garlic cloves
- salt and pepper to taste
- 1 tablespoon olive oil
- mozzarella vegana
- vegetable butter (for greased bowl with removable walls)
Boil the pasta according to the instructions on the package.
Leave them to dry on a kitchen towel.
Grease with butter a bowl with removable walls (my one is 17 cm in diameter).
Put on the bottom of the pot a layer of sliced mushrooms and a layer of mozzarella.
Place on your feet, side by side, the cooked and dried pasta.
In the blender put the hydrated cashew and the vegetable milk. Mix well until the composition becomes homogeneous.
In a pan put on the fire, add the olive oil and garlic. Harden until it changes color and turns golden.
Add the chopped mushrooms and chew until soft. Take turns putting salt and pepper, the sauce obtained from cashews and vegetable milk, and finally the inactive yeast flakes.
Pour the composition over the pasta in the bowl with removable walls, and make sure that it enters each paste individually.
Sprinkle the mozzarella on top and put in the oven until it melts.
Serve the dish warm!
